What to Bake this Weekend

I know I wasn't the only one counting down the days to break out my fall scented candles and pumpkin decor. Tis the season to bake, drink lattes and get spooky! This is one of my go-to bakes that are super easy and doesn't take a ton of work or different pieces of equipment.


Chia Seed and Flaxseed Banana Bread

Ingredients:

  • 3 ripe bananas

  • 1/3 cup plain, fat-free Greek yogurt

  • 1/4 cup melted butter

  • 2 large eggs

  • 1/3 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 1/2 cup all purpose flour (I use Bob's Red Mill 1-1 Gluten Free all purpose flour)

  • 1/4 cup ground flax seed

  • 2 tbsp chia seeds

  • 1 tbsp cinnamon

  • 3/4 tsp baking soda

  • 1/2 tsp salt

Preparation:

  1. Preheat oven to 350 degrees F. coat a 9 x 5 inch loaf pan with nonstick spray

  2. Smash ripe bananas in a bowl with a hand held mixer or spoon

  3. In the same bowl as the smashed banana, add the yogurt, eggs, butter and sugars. Blend with a hand held mixer until the mixture is well combined

  4. In the same bowl add the flour, ground flaxseed, chia seeds, cinnamon, baking soda, and salt. Mix until the batter is combined

  5. Pour the batter into the loaf pan. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean
